Ingredients
- 2 lbs chicken thighs, boneless and skinless
- 3 dried guajillo chiles
- 2 dried ancho chiles
- 1/4 cup orange juice
- 2 cloves garlic
- 1 tsp cumin
- 1 tsp oregano
- Salt and pepper to taste
- Corn tortillas
- 1/2 fresh pineapple, diced
- 1/2 white onion, finely chopped
- Fresh cilantro
- Lime wedges
Instructions
- Remove stems and seeds from chiles. Toast in a dry pan for 30 seconds.
- Soak chiles in hot water for 15 minutes until soft.
- Blend chiles with orange juice, garlic, cumin, oregano, salt, and pepper.
- Marinate chicken in the chile mixture for at least 2 hours or overnight.
- Grill chicken over medium-high heat for 6-8 minutes per side until cooked through.
- Let rest for 5 minutes, then chop into small pieces.
- Warm tortillas on the grill or in a dry pan.
- Serve chicken on tortillas topped with pineapple, onion, cilantro, and lime.
